Fresh Ahi Tuna is one of the world’s most popular seafood options due to its firm, meaty texture and rich, distinct flavor. Ahi is a Hawaiian term for both yellowfin and bigeye tuna. While officially different species, they can be difficult to distinguish in terms of taste and appearance. As a result, our skilled fishmongers hunt for and pick the highest quality stock available each evening. Some distinctions you may notice include Yellowfin having a lighter crimson, stiffer, and gentler. Bigeye has a higher fat content.
Regardless of whether it is yellowfin, bigeye, or bluefin, #1 tuna must be high in fat. The presence of fat will be seen as marbling in the meat and around the skin. The texture will have a sticky feel to it and the color should be red, shiny and translucent.
