In this recipe Arctic Char is poached to tenderness in a flavorful bouillon, mixed with vegetables, and covered in a buttery hollandaise sauce. It is perfect for special occasions and was prepared by a Fulton Fish Market customer as a feast for the world premiere of the Frankenstein Opera in Arizona.
Ingredients
- 1 bottle dry white wine
- whole fresh fennel, sliced
- 1 white onion, julienned
- 2 large carrots, sliced on diagonal
- white asparagus
- 1 lemon, sliced
- 1 teaspoon salt
- 4 bay leaves
- bouquet of 1 bunch fresh parsley and 1 bunch thyme, tied together
- ½ teaspoon peppercorns
- water
- 18 Arctic Char portions
- 1 large fish poacher
Directions
- Set the poacher diagonally over the stove so it is over two burners.
- Place all the ingredients for the bouillon into the fish poacher.
- Add water until the fish poacher is about ⅗th full.
- Simmer for 30 minutes.
- Lower the Arctic Char into the bouillon, simmer for 15-20 minutes.
- Remove Arctic Char and vegetables from liquid.
- Combine fish and vegetables and top with sliced lemons and a hollandaise sauce.
